Why can't the site just handle this for me?
Because doing it wrong would be worse than doing it slowly. The 8 requests that wait for a person all change something with legal consequence — a record, a right, a payment, or what the registry says on the record — and each needs a judgement software should not make on its own.
A deletion request is the clearest case: before anything is removed, the registry has to be satisfied the request comes from the person it concerns. Skipping that step would let somebody else erase your record.
Everything that does not carry that risk is already self-service, and the list of what does is fixed rather than growing quietly.
